Ingredients

12 oz fettuccine or linguine pasta

1 lb shrimp, peeled and deveined

1 tbsp olive oil

2 tbsp butter

4 cloves garlic, minced

0.5 cup sun-dried tomatoes, chopped

0.75 cup chicken broth

1 cup heavy cream

0.75 cup grated parmesan cheese

1 tsp Italian seasoning

0.25 tsp red pepper flakes

Salt, to taste

Black pepper, to taste

2 tbsp chopped fresh parsley

Instructions

1. Cook pasta in salted boiling water until al dente. Drain and set aside.

2. Season shrimp with salt, black pepper, and a pinch of red pepper flakes.

3. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and lightly browned. Remove and set aside.

4. In the same skillet, melt butter. Add garlic and sauté for 30 seconds until fragrant.

5. Stir in sun-dried tomatoes and cook for another minute.

6. Pour in chicken broth and heavy cream. Bring to a simmer.

7. Add parmesan cheese and stir until melted and sauce thickens slightly.

8. Sprinkle in Italian seasoning and adjust seasoning with salt and pepper.

9. Return cooked pasta to the skillet and toss to coat in the sauce.

10. Add shrimp back to the pan and stir gently to combine.

11. Garnish with chopped parsley and serve immediately.

Notes

For the best texture, pat the shrimp dry before searing to get that golden crust.

Use freshly grated parmesan for a smoother, creamier sauce.

To reheat leftovers, add a splash of cream or broth to restore the sauce’s creaminess.
