Ingredients
1 medium head green cabbage
2 tablespoons olive oil
4 tablespoons unsalted butter melted
4 cloves garlic minced
1 cup heavy cream
1/2 cup chicken broth
1 teaspoon Dijon mustard
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon smoked paprika
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup grated Parmesan cheese
4 slices bacon cooked and crumbled
2 tablespoons panko breadcrumbs
2 tablespoons chopped fresh dill or parsley
1 tablespoon chopped fresh chives
Instructions
1. Preheat the oven to 400°F (200°C) and lightly grease a large baking dish.
2. Remove any tough outer leaves from the cabbage, then slice the head into 6–8 thick wedges, keeping the core attached so the wedges hold together. Arrange them in the baking dish, cut sides facing up.
3. Drizzle the cabbage wedges with olive oil and season with kosher salt, black pepper, smoked paprika, and crushed red pepper flakes.
4. In a bowl or large measuring cup, whisk together the melted butter, minced garlic, heavy cream, chicken broth, Dijon mustard, and Italian seasoning until smooth.
5. Pour the creamy mixture around and over the cabbage wedges, letting some of it sink between the layers. Sprinkle half of the grated Parmesan over the top, then cover the dish tightly with foil.
6. Bake for 25–30 minutes, until the cabbage is starting to soften when pierced with a fork.
7. Remove the foil, spoon some of the sauce from the bottom of the dish over each wedge, then top with the remaining Parmesan and the panko breadcrumbs.
8. Return the dish to the oven, uncovered, and bake for another 10–15 minutes, or until the cabbage is very tender and the top is golden and bubbling.
9. For extra crispy edges, switch the oven to broil for 2–3 minutes at the end, watching closely so the topping doesn’t burn.
10. Remove from the oven, spoon more sauce over each wedge, and finish with crumbled bacon, fresh dill or parsley, and chives before serving hot.
Notes
Do not over-bake the cabbage uncovered for too long or the cream sauce can reduce too much and split; pull it from the oven as soon as the wedges are fork-tender and the top is nicely golden.
