Ingredients

2 cups cooked shredded chicken

1 cup uncooked long grain white rice

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of celery soup

1 cup sour cream

1 ¾ cups chicken broth

1 ½ cups shredded cheddar cheese

6 slices cooked bacon, crumbled

2 tablespoons butter, melted

2 tablespoons chopped fresh chives (for garnish)


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.

2. In a large bowl, mix cream of chicken soup, cream of celery soup, sour cream, chicken broth, and uncooked rice until combined.

3. Fold in the shredded chicken until evenly coated.

4. Pour the mixture into the prepared baking dish and spread evenly.

5. Top with shredded cheddar cheese and crumbled bacon.

6. Drizzle melted butter over the top.

7. Cover tightly with foil and bake for 45 minutes.

8. Remove foil and bake an additional 10–15 minutes, until cheese is bubbly and lightly golden.

9. Remove from oven and let sit for 5 minutes before garnishing with chopped chives and serving.

Notes

Use rotisserie chicken to save time.

Let the casserole rest after baking to firm up.

You can mix in 1 cup of frozen vegetables for extra flavor and color.
