Ingredients

70 g almond flour

100 g powdered sugar

40 g freeze-dried raspberries

2 large egg whites

50 g granulated sugar

1/4 tsp cream of tartar (optional)

100 g white chocolate

60 ml heavy cream

2 tbsp chopped unsalted pistachios (for topping)

12 drops pink gel food coloring (optional)


Instructions

1. Sift almond flour and powdered sugar together into a bowl. Process freeze-dried raspberries into powder and sift them into the same bowl.

2. In a separate clean bowl, whip the egg whites on medium speed until foamy. Add cream of tartar if using.

3. Gradually add granulated sugar to the egg whites while continuing to whip until stiff peaks form.

4. Gently fold the dry ingredients into the whipped egg whites using a spatula. The batter should flow like lava. Add gel food coloring if desired.

5. Transfer the mixture into a piping bag fitted with a round tip. Pipe circles onto a parchment-lined baking sheet. Tap the sheet to release air bubbles.

6. Let the piped batter rest at room temperature for 30–60 minutes until a skin forms. Preheat the oven to 300°F (150°C).

7. Bake for 14–16 minutes. Let cool completely before removing from the baking sheet.

8. Heat heavy cream until just simmering, then pour over the chopped white chocolate. Let sit for a minute, then stir until smooth. Chill until firm enough to pipe.

9. Pipe ganache onto half the macarons and sandwich with the other halves.

10. Sprinkle chopped pistachios and a dusting of powdered sugar on top. Chill for at least 24 hours for best texture.
