Ingredients

1 cup orzo pasta

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil (for shrimp)

2 garlic cloves, minced

1 teaspoon lemon zest

1 tablespoon lemon juice (plus more for serving)

1 cup cherry tomatoes

2 cups fresh spinach

1 tablespoon olive oil (for sautéing)

1/3 cup crumbled feta cheese

1 tablespoon fresh dill, chopped

Salt, to taste

Black pepper, to taste


Instructions

1. Bring a pot of salted water to a boil. Add orzo and cook until al dente, about 8-10 minutes. Drain and toss with a little olive oil to prevent sticking.

2. Preheat oven to 400°F (200°C). Toss shrimp with olive oil, garlic, lemon zest, salt, and pepper. Arrange on a baking sheet and roast for 8-10 minutes, until pink and slightly crisp on the edges.

3. Heat olive oil in a skillet over medium heat. Add cherry tomatoes and cook until they begin to blister, about 3-4 minutes. Add spinach and sauté until wilted. Season lightly with salt.

4. In a large bowl, combine cooked orzo with lemon juice, fresh dill, and a drizzle of olive oil. Mix well.

5. Top orzo mixture with roasted shrimp, sautéed tomatoes and spinach. Sprinkle crumbled feta cheese over the top.

6. Garnish with more dill and a lemon wedge if desired. Serve immediately while warm.

Notes

Always pat your shrimp dry before roasting for the best caramelized edges.

Add a splash of reserved pasta water to the orzo if it feels too dry before serving.

For a spicy twist, sprinkle crushed red pepper flakes when roasting the shrimp.
