Ingredients
8 large eggs
4 flour tortillas
2 cups canned chili
1 ½ cups shredded cheddar cheese
½ cup sour cream
½ cup diced tomatoes
¼ cup chopped green onions
1 tablespoon chopped chives (optional)
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a round baking dish or springform pan.
2. In a bowl, whisk eggs until smooth. Pour into the prepared dish and bake for 12 minutes or until set.
3. Remove from oven and place tortillas over the egg layer, trimming to fit if needed.
4. Spoon the chili evenly over the tortillas, spreading to the edges.
