Ingredients

2 cups shredded cooked chicken

8 corn tortillas, torn into pieces

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

1 can (10 oz) diced tomatoes with green chiles (like Rotel), undrained

1 small onion, finely chopped

1 tablespoon butter or oil

1 teaspoon garlic powder

1 teaspoon chili powder

2 cups shredded cheddar cheese


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a skillet, heat butter or oil over medium heat. Add chopped onion and sauté until translucent.

3. In a large bowl, combine cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles, garlic powder, chili powder, and the sautéed onions. Mix well.

4. Layer torn corn tortillas at the bottom of the baking dish.

5. Add a layer of shredded chicken over the tortillas.

6. Spoon a portion of the soup mixture over the chicken.

7. Repeat the layers, finishing with the soup mixture on top.

8. Sprinkle shredded cheddar cheese evenly across the top layer.

9. Cover with foil and bake for 30 minutes.

10. Remove foil and bake for an additional 10–15 minutes until the top is bubbly and golden brown.

11. Let the casserole rest for 10 minutes before serving.

Notes
