Ingredients

1 1/2 cups shredded Swiss cheese, divided

8 thin slices deli corned beef (about 8 ounces)

1/2 cup sauerkraut, well drained and squeezed dry

2 ounces cream cheese, softened

2 tablespoons sugar-free Thousand Island dressing, plus extra for serving

1 teaspoon Dijon mustard

1 tablespoon butter or avocado oil, for crisping the roll-ups

1 tablespoon chopped fresh chives, for garnish (optional)

Pinch of caraway seeds or caraway powder, optional

Salt and black pepper, to taste


Instructions

1. Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper. Divide 1 cup of the shredded Swiss cheese into 8 small piles on the sheet, spacing them a few inches apart.

2. In a medium bowl, stir together the sauerkraut, cream cheese, remaining 1/2 cup shredded Swiss, sugar-free Thousand Island dressing, Dijon mustard, caraway, salt, and pepper until well combined.

3. Bake the cheese piles for 7 to 9 minutes, or until the cheese is fully melted with lightly golden, lacy edges. Let the cheese rounds cool for 1 to 2 minutes, just until they are set but still flexible.

4. Lay one slice of corned beef over each cheese round. Spoon a strip of the sauerkraut mixture down one edge, then carefully roll each one up into a tight log.

5. Heat the butter or avocado oil in a large nonstick skillet over medium heat. Add the roll-ups seam-side down and cook 1 to 2 minutes per side, turning until all sides are deeply golden and crispy.

6. Transfer the keto Reuben roll-ups to a serving plate, sprinkle with chopped chives, and serve hot with extra sugar-free Thousand Island dressing for dipping.

Notes

For the crispiest texture, squeeze as much liquid as possible out of the sauerkraut—excess moisture can keep the cheese shells from getting beautifully crunchy.
