Ingredients

4 salmon fillets

3 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped

1/2 cucumber, grated

1 clove garlic, minced

1 tablespoon lemon juice

1/4 teaspoon salt

1/8 teaspoon black pepper

1 cucumber, sliced

1/2 red onion, thinly sliced

1 cup shredded lettuce

4 pita breads or flatbreads


Instructions

1. Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add salmon fillets and coat well. Marinate in the fridge for 20 minutes.

2. Heat grill or grill pan over medium-high. Grill salmon 4–5 minutes per side, or until cooked through. Let rest and then slice into chunks.

3. In a bowl, mix Greek yogurt with dill, grated cucumber, garlic, lemon juice, salt, and pepper. Stir until smooth. Chill until ready.

4. Prep fillings: slice cucumbers, onions, wash lettuce, and warm pitas.

5. Assemble gyros: layer lettuce, cucumber, onion, and salmon on each pita. Top with dill yogurt sauce and fresh dill. Add lemon juice if desired.

Notes

For best grill marks, don’t move the salmon until it naturally releases.

Use gluten-free pita for a gluten-free version.

Refrigerate leftover sauce up to 4 days.
