Ingredients
8 oz cream cheese, softened
1 cup shredded cheddar cheese
3 fresh jalapeños, finely chopped
6 slices cooked bacon, crumbled
3 green onions, sliced
12 egg roll wrappers
1 egg, beaten (for egg wash)
Oil, for frying
Instructions
1. In a bowl, mix together the cream cheese, cheddar, jalapeños, bacon, and green onions until well combined.
2. Lay one egg roll wrapper with a corner facing you. Spoon 2 tablespoons of filling into the center.
3. Fold the bottom point over the filling, then fold in the sides and roll tightly. Seal with egg wash.
4. Heat 2 inches of oil in a skillet to 350°F.
5. Fry egg rolls in batches of 3–4 for about 3–4 minutes or until golden and crispy.
6. Drain on paper towels.
7. Serve hot with ranch or your favorite dipping sauce.
