Ingredients
2.5 lbs beef chuck roast, cut into chunks
4 carrots, peeled and sliced
3 potatoes, peeled and diced
1 large onion, chopped
4 garlic cloves, minced
3 cups beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/4 cup all-purpose flour
1 cup frozen peas
Instructions
1. Set the Instant Pot to “Sauté” mode. Toss beef with flour, salt, and pepper.
2. Add olive oil and sear beef in batches until browned. Remove and set aside.
3. Add chopped onion and garlic to the pot. Sauté for 2–3 minutes.
4. Stir in tomato paste and Worcestershire sauce. Deglaze with a bit of beef broth, scraping the bottom.
5. Return beef to pot. Add carrots, potatoes, remaining broth, thyme, rosemary, and bay leaf.
6. Lock lid. Cook on high pressure for 35 minutes.
7. Allow natural release for 10–15 minutes.
8. Stir in frozen peas. Let sit for 5 minutes.
9. Remove bay leaf. Taste and adjust seasoning. Serve warm.
Notes
For deeper flavor, add 1/2 cup red wine after sautéing onions and reduce before adding broth.
Store in airtight containers for up to 4 days in the fridge or 3 months in the freezer.
If desired, thicken gravy with cornstarch slurry after pressure cooking.
