Ingredients
1 cup yellow cornmeal
½ cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 tablespoon sugar
¾ cup buttermilk
1 large egg
2 tablespoons grated onion
Optional: ¼ cup chopped jalapeños, shredded cheese, or cooked crumbled bacon
Oil for frying (vegetable or peanut)
Instructions
1. In a large bowl, combine cornmeal, flour, baking powder, salt, and sugar.
2. In the center of the dry ingredients, add buttermilk, egg, and grated onion. Stir until just combined. Batter should be thick.
3. Heat 2 inches of oil in a skillet or deep pot to 350°F (175°C).
4. Using a spoon or cookie scoop, drop small spoonfuls of batter into the hot oil.
5. Fry in batches, turning as needed, for 2–3 minutes per side or until golden brown.
6. Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
Notes
For extra flavor, try mixing in jalapeños, shredded cheddar, or cooked bacon.
Don’t overcrowd the frying pan—work in small batches for even cooking.
Use a thermometer to monitor oil temperature and avoid under- or over-cooking.
