Ingredients

1 pound carrots

2 tablespoons honey

1 tablespoon olive oil

0.5 teaspoon salt

0.25 teaspoon black pepper

2 teaspoons fresh thyme leaves (plus more for garnish)


Instructions

1. Preheat your oven to 400°F (200°C). Peel and slice the carrots into ½-inch thick coins.

2. In a mixing bowl, whisk together honey, olive oil, salt, and black pepper.

3. Add the carrots to the bowl and toss to evenly coat.

4. Spread the coated carrots in a single layer on a parchment-lined baking sheet.
