Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 large eggs

3/4 cup granulated sugar

1 cup honey

1/2 cup vegetable oil

3/4 cup strong brewed tea or coffee

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In another bowl, whisk eggs, sugar, honey, oil, tea or coffee, and vanilla until smooth.

4. Pour the wet ingredients into the dry and stir just until combined—do not overmix.

5. Pour batter into prepared pan and smooth the top.

6. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

8. Slice and serve with butter, honey, or your favorite topping.

Notes

Use freshly brewed tea or coffee to enhance flavor depth.

Letting the cake rest overnight improves flavor and moisture.

You can easily double the recipe for larger gatherings.
