Ingredients

12 Egg roll wrappers

2 cups shredded cabbage

1 cup julienned carrots

1 red bell pepper finely chopped

3 green onions chopped

2 cloves garlic minced

1 teaspoon grated fresh ginger

2 tablespoons soy sauce

1 teaspoon sesame oil

1 teaspoon salt

1⁄2 teaspoon black pepper

Oil for frying (vegetable or peanut oil)


Instructions

1. Heat sesame oil in a large skillet over medium-high heat. Sauté garlic and ginger until fragrant.

2. Add cabbage, carrots, green onions, and bell pepper. Stir-fry for 4–5 minutes until slightly tender.

3. Add soy sauce, salt, and pepper. Mix well and let the filling cool completely.

4. Place one egg roll wrapper on a clean surface like a diamond.

5. Spoon about 2 tablespoons of filling in the center.

6. Fold the bottom corner over the filling, then fold in both sides, and roll up tightly.

7. Seal the edge with a dab of water to keep the roll closed.

8. Heat oil in a deep skillet to 350°F (175°C).

9. Fry a few egg rolls at a time, turning until golden brown and crispy (about 3–4 minutes).

10. Remove and drain on paper towels.

11. Serve hot with your favorite dipping sauce.

Notes

Keep wrappers covered with a damp towel while assembling to prevent drying out.

Don’t overstuff the egg rolls to avoid tearing during frying.

Let the filling cool before assembling to prevent soggy wrappers.
