Ingredients

1 lb ground turkey

1 head butter lettuce, leaves separated

2 cloves garlic, minced

1 tbsp fresh ginger, minced

3 tbsp soy sauce

2 tbsp hoisin sauce

1 tsp sesame oil

1 tbsp rice vinegar

1 tbsp sriracha

1 cup shredded carrots

1 cup shredded red cabbage

1 cucumber, thinly sliced

2 green onions, sliced

2 tbsp chopped cilantro

2 tbsp chopped peanuts

1/3 cup creamy peanut or sesame dressing

1 tbsp olive oil


Instructions

1. Wash and dry the lettuce leaves, then arrange them on a serving plate or in shallow bowls.

2. Prep the carrots, cabbage, cucumber, green onions, and cilantro so everything is ready for assembly.

3. Heat the olive oil in a skillet over medium heat, then add the garlic and ginger and cook briefly until fragrant.

4. Add the ground turkey and cook, breaking it apart, until browned and fully cooked through.

5. Stir in the soy sauce, hoisin sauce, sesame oil, rice vinegar, and sriracha, then let the mixture simmer for a couple of minutes until glossy and well coated.

6. Spoon the warm turkey mixture into the lettuce leaves and arrange the carrots, cabbage, and cucumber around the bowl or over the top.

7. Finish with green onions, cilantro, chopped peanuts, and a drizzle of creamy dressing before serving.

Notes

Do not add the sauce too early and overcook the turkey, or the filling can turn dry instead of juicy and flavorful.
