Description

Hawaiian Teriyaki Chicken is a quick dinner packed with juicy chicken, sweet pineapple flavor, and a rich savory glaze. Ingredients

2 pounds boneless skinless chicken thighs

3/4 cup pineapple juice

1/2 cup soy sauce

1/3 cup brown sugar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

2 green onions, sliced

1 tablespoon sesame seeds

4 pineapple slices


Instructions

1. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil until well combined.

2. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 30 minutes or up to 8 hours.

3. Remove the chicken from the marinade and reserve the liquid.

4. Pour the reserved marinade into a small saucepan and bring it to a gentle simmer.

5. Stir together the cornstarch and water in a small bowl, then whisk it into the simmering sauce until thickened and glossy.

6. Grill or cook the chicken in a hot skillet over medium heat until fully cooked and nicely caramelized on both sides.

7. Brush the thickened sauce over the chicken during the last few minutes of cooking.

8. Transfer the chicken to a serving platter and garnish with sliced green onions, sesame seeds, and pineapple slices.

9. Serve hot with rice or vegetables if desired.

Notes

Do not cook the chicken over heat that is too high for too long, or the sugars in the marinade can burn before the inside is fully cooked.
