Ingredients
1 cup whole kernel corn
1 cup cream-style corn
1/2 cup cornmeal
1/4 cup all-purpose flour
3 large eggs
1/2 cup melted butter
1 cup sour cream
1/2 cup milk
2 tablespoons granulated sugar
1 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 350°F and grease an 8-inch baking dish.
2. In a large bowl, whisk together the eggs, melted butter, sour cream, milk, and cream-style corn until smooth.
3. Add the cornmeal, flour, sugar, salt, and black pepper, then stir until fully combined.
4. Fold in the whole kernel corn and mix gently so it is evenly distributed.
5. Pour the batter into the prepared baking dish and spread it evenly.
6. Bake for 45 to 50 minutes, or until the top is golden brown and the center is set with a slight jiggle.
7. Let the corn pudding rest for 10 minutes before serving.
Notes
Do not overbake the corn pudding, or the center can lose its soft, creamy texture.
