Ingredients

1.5 pounds beef chuck roast, cut into cubes

8 ounces cremini mushrooms, sliced

1 yellow onion, diced

3 garlic cloves, minced

1 tablespoon Dijon mustard

3/4 cup sour cream

1 cup beef stock

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh thyme, chopped

Salt, to taste

Black pepper, to taste

8 ounces wide egg noodles

1 tablespoon butter (for noodles)


Instructions

1. Cut beef into bite-sized cubes and pat dry with paper towels.

2. Heat olive oil in a large skillet over medium-high heat. Sear beef in batches for 2–3 minutes until browned on all sides. Set aside.

3. In the same skillet, melt butter. Add diced onion and sauté for 3 minutes until translucent.

4. Add minced garlic and cook for 1 more minute.

5. Stir in sliced mushrooms and cook until browned, about 5–6 minutes.

6. Return beef to the skillet. Stir in Dijon mustard and beef stock. Simmer for 10 minutes.

7. Lower heat and stir in sour cream until smooth. Simmer for 5 more minutes.

8. Add chopped thyme and season with salt and pepper.

9. While sauce simmers, cook egg noodles according to package directions. Drain and toss with butter.

10. Serve beef stroganoff over the noodles. Garnish with more thyme if desired.

Notes

Make sure to sear the beef in batches to avoid overcrowding the pan. This ensures a nice crust.

Use full-fat sour cream for the creamiest texture and best flavor.

If reheating, warm on low heat and add a splash of broth to maintain creaminess.
