Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
1.5 lbs baby potatoes or Yukon Gold potatoes, halved
4 garlic cloves, minced
1 cup grated parmesan cheese
1 cup heavy cream
2 teaspoons Italian seasoning
1 tablespoon olive oil
1 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. Heat olive oil in a skillet and sear chicken for 2–3 minutes on each side.
3. Place halved potatoes in the crockpot and arrange seared chicken on top.
4. In a bowl, mix heavy cream, minced garlic, parmesan, and a pinch of seasoning.
5. Pour the mixture over chicken and potatoes.
6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
7. Gently stir before serving and garnish with parsley and more parmesan if desired.
Notes
Searing the chicken before slow cooking adds richer flavor.
You can substitute half-and-half for heavy cream for a lighter version.
