Ingredients

4 medium sweet potatoes

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

4 tablespoons butter

1 cup sour cream

1/2 cup finely chopped red onion

2 tablespoons chopped fresh chives

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes


Instructions

2. Scrub and dry the 4 medium sweet potatoes thoroughly. Pierce each potato several times with a fork.
