Ingredients

2 slices thick-cut bread

2 tablespoons butter

1 clove garlic, minced

1/2 cup shredded mozzarella cheese

1/4 cup shredded cheddar cheese

1 teaspoon chopped fresh parsley or thyme


Instructions

1. Melt butter in a small skillet over low heat and stir in minced garlic. Cook for 2–3 minutes until fragrant but not browned.

2. Brush one side of each bread slice with the garlic butter mixture.

3. On the non-buttered sides, layer mozzarella and cheddar. Sprinkle herbs over the cheese.

4. Close the sandwich and place in a skillet over medium heat. Press gently with a spatula.

5. Toast for 3–4 minutes on one side until golden.

6. Flip carefully, press again, and toast for another 3–4 minutes until the cheese is melted.

7. Serve immediately while hot and melty.

Notes

Let the garlic infuse the butter slowly — don’t rush or burn it.

For extra crispiness, use a cast iron skillet.
