Ingredients
1 lb boneless skinless chicken breast or thighs
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
4 tablespoons unsalted butter
5 cloves garlic minced
1 cup heavy cream
1 teaspoon Cajun seasoning
1/2 teaspoon red chili flakes
1/2 cup grated Parmesan cheese
8 oz rotini pasta
1/4 cup reserved pasta water
1/2 cup cherry tomatoes halved
1 tablespoon chopped parsley
Instructions
1. Cut the chicken into bite-sized pieces and season with salt, pepper, and paprika.
2. Heat olive oil in a skillet over medium-high and sear chicken until golden brown and fully cooked, about 6-7 minutes. Set aside.
3. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and stir until fragrant.
4. Pour in the heavy cream and simmer. Stir in Cajun seasoning, chili flakes, and Parmesan cheese. Mix until smooth.
5. Cook rotini pasta in salted water until al dente. Reserve 1/4 cup of pasta water and drain.
6. Add cooked pasta and reserved water to the sauce. Toss to coat. Add cherry tomatoes and seared chicken back in.
7. Simmer for 2 more minutes until everything is well mixed and heated.
8. Serve topped with chopped parsley and extra chili flakes if desired.
