Ingredients

2 ½ pounds beef short ribs

4 large yellow onions, thinly sliced

4 cloves garlic, minced

6 cups beef bone broth

1 cup red wine

2 bay leaves

4 sprigs fresh thyme

3 tablespoons butter

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

8 slices baguette

1 ½ cups shredded Gruyère cheese


Instructions

1. Season beef short ribs with salt and pepper, then sear in olive oil over medium-high heat until browned on all sides. Remove and set aside.

2. Lower heat and add butter, then sliced onions. Cook slowly, stirring often, for 30–40 minutes until deeply caramelized.

3. Stir in garlic until fragrant. Deglaze pan with red wine, scraping up browned bits from the bottom.

4. Return short ribs to the pot. Add beef bone broth, bay leaves, and thyme. Bring to a simmer.

5. Cover and simmer for 2.5 to 3 hours, until beef is fall-apart tender. Remove short ribs, shred meat, and return to pot. Discard bones and herbs.

6. Toast baguette slices under a broiler. Ladle soup into oven-safe bowls.

7. Top each bowl with toast and a generous amount of Gruyère. Broil until cheese is melted and bubbling.

8. Serve hot, optionally topped with fresh herbs.

Notes

Use bone-in short ribs for extra depth of flavor in the broth.

If you don’t have oven-safe bowls, melt the cheese separately on the toast and place it on top before serving.

The soup base freezes beautifully—just add fresh toast and cheese when reheating.
