Ingredients

1 tablespoon olive oil

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

3 cloves garlic, minced

1 cup chicken broth

3/4 cup heavy cream

4 ounces cream cheese, softened

1/3 cup grated Parmesan cheese

1/2 cup sliced pepperoncini peppers

2 tablespoons pepperoncini juice

1 teaspoon Italian seasoning

1 tablespoon chopped fresh parsley


Instructions

1. Season chicken breasts on both sides with salt and black pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden. Remove and set aside.

3. Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds.

4. Pour in chicken broth and scrape up the browned bits at the bottom of the pan.

5. Stir in heavy cream, cream cheese, Parmesan, pepperoncini juice, and Italian seasoning. Stir until smooth and creamy.

6. Return chicken to skillet and add sliced pepperoncini. Simmer for 10-12 minutes until chicken is cooked through and sauce thickens slightly.

7. Top with chopped fresh parsley and serve hot with your favorite sides.

Notes

Use jarred mild pepperoncini for tang without too much heat.

Chicken thighs can be used instead of breasts for extra juiciness.

Add a splash of broth when reheating to keep the sauce smooth.
