Ingredients
2 filet mignon steaks
8 large shrimp, peeled and deveined
1 cup cooked lobster meat (tail or claw)
1 cup heavy cream
2 tablespoons unsalted butter
2 garlic cloves, minced
1 shallot, minced
1/3 cup dry white wine
1/4 cup grated parmesan cheese
1 tablespoon chopped parsley
1 teaspoon chopped thyme
2 tablespoons cooked bacon bits
Salt to taste
Cracked black pepper to taste
Instructions
1. Season filet mignons with salt and cracked pepper. In a hot cast-iron skillet, sear each side in butter until browned, about 3–4 minutes per side.
2. Transfer filets to a 400°F oven and roast to your desired doneness (about 6–8 minutes for medium-rare).
3. In the same skillet, add butter and sear shrimp until pink and opaque, about 2 minutes per side. Remove and set aside.
4. Lower heat, then sauté garlic and shallot until fragrant.
5. Deglaze the skillet with white wine, scraping up any browned bits.
6. Add heavy cream and bring to a simmer. Stir in lobster meat, parmesan, parsley, thyme, and bacon.
7. Simmer until slightly thickened. Season with salt and pepper to taste.
8. Plate each filet, top with shrimp, and spoon sauce generously over everything. Garnish with herbs and serve hot.
Notes
Don’t overcook the shrimp or lobster—cook just until done to keep them tender.
Let filet mignon rest 5 minutes after roasting before plating to retain juices.
Use freshly grated parmesan for the smoothest sauce texture.
