Ingredients

12 frozen potato and cheese pierogi

14 ounces smoked sausage or kielbasa, sliced

1 small onion, thinly sliced

2 tablespoons butter

1 can cream of mushroom soup

1 cup sour cream

1/2 cup milk

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

2 tablespoons chopped chives or green onions

1/2 cup sour cream for serving, optional


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a skillet over medium heat, brown the sliced sausage until lightly crisp around the edges, then transfer it to a plate.

3. In the same skillet, melt the butter and cook the onion until softened and lightly golden.

4. In a medium bowl, whisk together the cream of mushroom soup, sour cream, milk, garlic powder, and black pepper until smooth.

5. Arrange the pierogi in the prepared baking dish in an even layer.

6. Scatter the browned sausage and softened onion over the pierogi.

7. Spoon the creamy sauce over the top and spread it gently so everything is coated.

8. Sprinkle the cheddar and mozzarella evenly over the casserole.

9. Bake uncovered for 30 to 35 minutes, until bubbly and golden on top.

10. Let the casserole rest for 5 minutes, then garnish with chives or green onions and serve with extra sour cream if desired.

Notes

Do not overbake the casserole, or the sauce can thicken too much and lose its creamy texture.
