1 medium onion, finely chopped
1 can (28 oz) crushed tomatoes
2 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sugar (optional)
1/4 teaspoon red pepper flakes (optional)
Instructions
1. Heat olive oil in a large pan over medium heat. Add the chopped onion and cook for 5 minutes until translucent.
2. Add the minced garlic and cook for another 30 seconds until fragrant.
3. Stir in tomato paste and let it cook for 2-3 minutes to deepen the flavor.
4. Add crushed tomatoes, salt, pepper, oregano, basil, and sugar (if using). Stir everything to combine.
5. Lower the heat and let the sauce simmer uncovered for 20-25 minutes, stirring occasionally.
6. Taste and adjust seasoning if needed. Add red pepper flakes for heat, if desired.
7. Serve hot over your favorite pasta or cool and store for later use.
Notes
Use San Marzano tomatoes if available for richer flavor.
You can freeze leftovers for up to 3 months.
Stir in a splash of cream at the end if you want a creamy variation.
