Ingredients

1 pound shrimp, peeled and deveined

8 ounces smoked sausage, sliced

1 pound chicken breast or thighs, diced

1 cup bell peppers, diced

1 cup onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

2 cups chicken broth

1 cup long grain white rice

2 tablespoons Cajun seasoning

1/4 cup green onions, chopped (for garnish)


Instructions

1. Sear the sliced sausage in a large pot until browned and caramelized. Remove and set aside.

2. In the same pot, cook the chicken until browned and cooked through. Lightly season with salt and Cajun seasoning.

3. Add the onions, bell peppers, and garlic. Sauté until vegetables are soft and aromatic.

4. Stir in the diced tomatoes with their juices and the uncooked rice. Let the rice absorb the flavors briefly.

5. Pour in the chicken broth. Return sausage and chicken to the pot. Cover and simmer for about 20 minutes.

6. Stir in the shrimp and cook for another 5 minutes, or until shrimp are pink and cooked through.

7. Fluff the rice gently, garnish with chopped green onions, and serve hot.

Notes

Use andouille sausage for the most authentic flavor, but kielbasa works well too.

Make sure to add the shrimp at the end to prevent overcooking.

For extra heat, add hot sauce or cayenne pepper to taste.
