Ingredients

4 cups chicken broth

3 large eggs

2 tablespoons cornstarch

3 tablespoons water

1 tablespoon soy sauce

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1 teaspoon sesame oil

2 green onions, chopped


Instructions

1. In a small bowl, mix 2 tablespoons of cornstarch with 3 tablespoons of water until smooth.

2. In a medium saucepan, bring 4 cups of chicken broth to a gentle boil over medium heat.

3. Stir in 1 tablespoon soy sauce, 1/2 teaspoon garlic powder, and 1/2 teaspoon ground ginger.

4. Reduce heat to a simmer and whisk in the cornstarch slurry. Let it cook for 1–2 minutes to slightly thicken.

5. In a separate bowl, beat 3 large eggs. Slowly drizzle the eggs into the simmering broth while stirring in a circular motion.

6. Remove from heat, stir in 1 teaspoon sesame oil.

7. Garnish with 2 chopped green onions before serving.

Notes

For best egg ribbons, drizzle slowly and stir continuously in one direction.

To make it vegetarian, swap chicken broth for vegetable or mushroom broth.

Add-ins like corn, tofu, or shredded chicken work great for extra texture and protein.
