Ingredients

4 tablespoons unsalted butter

1 large yellow onion, finely chopped

20 garlic cloves, thinly sliced

6 cups chicken broth

4 sprigs fresh thyme

1 bay leaf

2 large eggs

1 tablespoon fresh lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, finely chopped

4 slices rustic bread


Instructions

1. Melt the butter in a large pot over medium-low heat. Add the chopped onion and sliced garlic. Cook gently for 10 minutes, stirring often, until soft and fragrant without browning.

2. Pour in the chicken broth. Add the thyme sprigs and bay leaf. Bring to a gentle simmer and cook for 20 minutes to develop flavor.

3. Remove the bay leaf and thyme stems. Blend the soup until smooth using an immersion blender.

4. In a bowl, whisk the eggs. Slowly add 1 cup of the hot soup to the eggs while whisking constantly to temper. Gradually stir the tempered egg mixture back into the pot.

5. Add the lemon juice, salt, and black pepper. Warm gently for 2–3 minutes without boiling.

6. Ladle into bowls and garnish each serving with parsley. Serve with one slice of rustic bread per bowl.

Notes

Do not allow the garlic to brown during cooking. Browning can cause bitterness and overpower the delicate, mellow flavor that defines this soup.
