Ingredients

1 lb ground beef

1 small onion, diced

1 packet taco seasoning

1 can Rotel tomatoes with green chilies

1 can cream of chicken soup

1 cup sour cream

2 cups shredded cheddar cheese

1 bag Nacho Cheese Doritos, lightly crushed

1 cup diced tomatoes

2 tablespoons chopped cilantro

Extra sour cream, for serving


Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. Cook the ground beef and diced onion in a skillet over medium heat until the beef is browned and the onion is soft, then drain any excess grease.

3. Stir in the taco seasoning and Rotel tomatoes with green chilies, then simmer for a few minutes until slightly thickened.

4. In a separate bowl, mix the cream of chicken soup, sour cream, and 1 cup of the shredded cheddar cheese until smooth.

5. Spread a layer of lightly crushed Doritos across the bottom of the prepared baking dish.

6. Spoon over half of the beef mixture, then spread half of the creamy mixture on top.

7. Repeat the layers, then finish with the remaining shredded cheddar cheese over the top.

8. Bake for 20 to 25 minutes, until the cheese is melted and the casserole is hot and bubbly.

9. Let it rest for 5 minutes, then top with diced tomatoes, chopped cilantro, and extra sour cream before serving.

Notes

Do not add the Doritos too far in advance, or they can lose too much crunch before baking.
