Ingredients
2 cups elbow macaroni, cooked and cooled
1 cup mayonnaise
1/2 cup sour cream
1 tablespoon Dijon mustard

1/4 teaspoon black pepper
1/2 cup celery, finely chopped
1/2 cup red onion, finely chopped
1/2 cup green bell pepper, finely chopped
2 hard-boiled eggs, chopped
1/2 teaspoon paprika, for garnish
2 tablespoons chopped chives or green onions, optional for garnish
Instructions
1. Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, about 8 minutes. Drain and rinse under cold water. Set aside to cool completely.
2. In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until smooth.
3. Dice the celery, red onion, green bell pepper, and hard-boiled eggs. Add them to the dressing.
4. Add the cooled macaroni to the bowl. Stir until everything is evenly coated. Taste and adjust seasoning.
5. Cover and refrigerate the salad for at least 2 hours to allow the flavors to meld.
6. Before serving, stir gently and garnish with paprika and chopped chives or green onions if desired.
