Ingredients

1 1/2 cups Biscoff cookies, crushed

6 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup Biscoff spread, creamy

1/3 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

3/4 cup semi-sweet chocolate chips (divided)

1/4 cup caramel sauce


Instructions

1. Preheat oven to 325°F (163°C) and line an 8×8-inch pan with parchment paper.

2. Mix crushed Biscoff cookies and melted butter until combined. Press into the pan and bake for 8 minutes. Let cool slightly.

3. Beat cream cheese and Biscoff spread until smooth.

4. Add sugar, egg, vanilla, and flour. Mix well.

5. Fold in 1/2 cup of chocolate chips.

6. Pour cheesecake mixture over the crust and smooth it out.

7. Sprinkle remaining 1/4 cup chocolate chips over the top.

8. Bake at 325°F for 28–30 minutes, until center is set but slightly jiggly.

9. Cool completely, then refrigerate for 2 hours.

10. Before serving, drizzle with caramel sauce and more chocolate chips.

Notes

Always let the bars chill fully before cutting for clean slices.

Use a hot knife for neat edges between cuts.

You can freeze individual bars by wrapping them in plastic wrap and storing in a sealed container.
