Ingredients
2 cups cooked shredded chicken
1 cup barbecue sauce
4 cups cauliflower rice
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 avocado, sliced
1 cup shredded cheddar cheese
1/3 cup chopped red onion
1/4 cup sliced green onions
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges
Instructions
1. Cook or prepare the chicken, then shred it into bite-sized pieces.
2. Season the chicken with garlic powder, smoked paprika, salt, and black pepper.
3. Add the chicken and barbecue sauce to a skillet over medium heat and stir until the chicken is fully coated and heated through.
4. In a separate pan, warm the olive oil and cook the cauliflower rice until tender but not soggy.
5. Divide the cauliflower rice among serving bowls.
6. Spoon the hot barbecue chicken over the cauliflower rice.
7. Top each bowl with sliced avocado, shredded cheddar cheese, chopped red onion, and green onions.
8. Finish with chopped cilantro and lime wedges, then serve immediately.
Notes
Do not overcook the cauliflower rice, or it can turn watery and make the whole bowl lose its best texture.
