Ingredients
3 cups chopped carrots
4 large eggs
1 cup vegetable oil
1½ cups granulated sugar
2½ cups all-purpose flour
1 tablespoon baking powder

200g dark chocolate
1 cup heavy cream
2 tablespoons butter (for ganache)
½ cup butter (for frosting)
2 cups powdered sugar
3 tablespoons carrot juice or carrot puree
1 teaspoon vanilla extract
Instructions
1. Peel and chop the carrots, then blend with eggs, oil, and sugar until completely smooth.
2. In a separate bowl, whisk together flour, baking powder, and salt. Add the carrot mixture to the dry mix and stir until just combined.
3. Divide the batter evenly into two greased and lined round cake pans. Bake at 350°F (175°C) for 35-40 minutes, or until a toothpick comes out clean. Let cool completely.
4. To make the ganache, melt chocolate with heavy cream and butter using a double boiler or microwave. Stir until glossy and smooth. Set aside to cool slightly.
5. For the frosting, beat butter until creamy, then gradually add powdered sugar. Mix in carrot juice or puree and vanilla until smooth. Adjust texture with more juice or sugar.
