Ingredients
900g beef chuck roast, cut into chunks
3 fresh jalapeños, sliced (remove seeds for less heat)
3 medium Yukon gold potatoes, diced
4 cloves garlic, minced
1 medium yellow onion, chopped
700ml beef broth
200g sharp cheddar cheese, shredded
100g cream cheese
400g canned diced tomatoes
1 tsp smoked paprika
1 tsp ground cumin
Salt and black pepper to taste
Instructions
1. Cut the beef chuck roast into large chunks and season with salt and pepper.
2. In a hot skillet, sear the beef on all sides until browned to develop rich flavor.
3. Transfer the seared beef to your crockpot.
4. Add chopped onions, minced garlic, diced potatoes, diced tomatoes, and sliced jalapeños.
5. Sprinkle in paprika and cumin.
6. Pour in the beef broth until ingredients are just covered.
7. Cover and cook on low for 7–8 hours or high for 4–5 hours, until the beef is fork-tender and the potatoes are soft.
