Ingredients

2 boneless, skinless chicken breasts

1 can (28 oz) crushed tomatoes

4 cups chicken broth

1.5 cups rotini pasta

3 cloves garlic, minced

2 teaspoons Italian seasoning

1 small onion, diced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt

0.5 teaspoon black pepper

2 tablespoons fresh parsley (optional)


Instructions

1. Place chicken breasts into the bottom of the slow cooker. Top with diced onions, garlic, crushed tomatoes, and chicken broth.

2. Sprinkle in Italian seasoning, salt, and pepper. Stir lightly to mix.

3. Cover and cook on low for 6-7 hours or high for 3-4 hours.

4. Remove the chicken, shred with two forks, and return to the pot.

5. Add heavy cream and rotini pasta. Stir, then cover and cook on high for 20-30 minutes until pasta is al dente.

6. Stir in grated Parmesan cheese until fully melted and combined.

7. Serve hot, garnished with parsley and extra cheese if desired.

Notes

For best texture, add pasta during the last 30 minutes of cooking.

To freeze, leave out the pasta and add it fresh when reheating.

You can substitute chicken thighs or pre-cooked rotisserie chicken.
