Ingredients
2 pounds boneless skinless chicken breasts
12 ounces fettuccine pasta
2 cups heavy cream
8 ounces cream cheese, softened
1 1/2 cups freshly grated Parmesan cheese
3 cloves garlic, minced
1 cup chicken broth
4 tablespoons butter
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Place the chicken breasts in the slow cooker and add the minced garlic, chicken broth, butter, Italian seasoning, salt, and black pepper.
2. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken is fully cooked and tender.
3. Remove the chicken from the slow cooker and shred it with two forks.
4. Return the shredded chicken to the slow cooker and stir in the softened cream cheese, heavy cream, and Parmesan cheese.
5. Cover and cook for 20 to 30 minutes more on low, stirring once or twice, until the sauce is smooth and creamy.
6. Meanwhile, cook the fettuccine in salted water until just al dente, then drain well.
7. Add the cooked pasta to the slow cooker and toss gently until fully coated in the Alfredo sauce.
8. Sprinkle with chopped parsley and serve hot.
