Ingredients

1 pound fresh green beans, trimmed

2 tablespoons olive oil

1 tablespoon unsalted butter, melted

2 cloves garlic, minced

1/3 cup freshly grated Parmesan cheese

1/4 cup panko breadcrumbs

1/4 teaspoon kosher salt, or to taste

1/4 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes, optional

1/2 teaspoon lemon zest, finely grated

1 teaspoon fresh lemon juice, plus more to taste


Instructions

1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.

2. Rinse the green beans under cold water, then pat them completely dry with a clean kitchen towel. Trim the stem ends, leaving the beans whole.

3. Add the green beans to a large bowl and toss with olive oil, melted butter, minced garlic, kosher salt, and black pepper until evenly coated.

4. In a separate small bowl, stir together the grated Parmesan, panko breadcrumbs, red pepper flakes (if using), and lemon zest.

5. Spread the seasoned green beans in a single layer on the prepared baking sheet. Sprinkle the Parmesan–panko mixture evenly over the top, allowing some to fall around the beans for extra crispy bits.

6. Roast for 15–18 minutes, tossing once halfway through, until the green beans are tender-crisp and the topping is golden brown and crunchy.

7. Remove the pan from the oven and immediately drizzle the green beans with fresh lemon juice. Taste and adjust seasoning with additional salt, pepper, or lemon if desired.

8. Transfer to a serving dish, spooning any crispy crumbs from the pan over the top, and serve hot.

Notes

For the crispiest texture, make sure the green beans are completely dry before seasoning—any excess moisture will cause them to steam instead of roast and will keep the Parmesan–panko coating from getting truly crunchy.
