Ingredients

8 cups crusty bread cubes (day-old or toasted)

1/2 cup unsalted butter

2 cups chopped yellow onion

1 1/4 cups chopped celery

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh thyme

1/4 cup chopped fresh parsley

1 1/4 teaspoons salt

1/2 teaspoon black pepper

2 cups vegetable broth, warmed


Instructions

1. Preheat oven to 300°F. Spread bread cubes on a baking sheet and toast for 25 minutes until dry and golden. Let cool.

2. In a large skillet, melt butter over medium heat. Add onion and celery; sauté for 10-12 minutes until soft and golden. Stir in rosemary and thyme and cook for 1 more minute.

3. In a large bowl, combine toasted bread, sautéed veggies, and parsley. Season with salt and pepper.

4. Drizzle in warm broth, tossing until bread is evenly moistened but not soggy.

5. Transfer to a greased 9×13-inch baking dish and gently press into an even layer.
