Ingredients

1.5 pounds boneless skinless chicken thighs

1 pound potato gnocchi

4 garlic cloves, minced

2 tablespoons olive oil

2 tablespoons salted butter

1 cup heavy cream

1/2 cup freshly grated parmesan cheese

1 tablespoon chopped fresh thyme or parsley

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Pat chicken thighs dry and season both sides with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–7 minutes per side until golden and fully cooked. Set aside and cover to keep warm.

3. Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the top, about 2–3 minutes. Drain and set aside.

4. In the same skillet used for the chicken, reduce heat to medium. Melt butter and add minced garlic. Sauté for 1 minute until fragrant.

5. Stir in heavy cream and bring to a gentle simmer. Add parmesan cheese and stir until melted and smooth. Season with salt and pepper.

6. Add cooked gnocchi to the sauce and toss gently to coat.

7. Slice the crispy chicken and place over the creamy gnocchi.

8. Garnish with fresh thyme or parsley and more parmesan if desired. Serve hot.

Notes

For extra crispy chicken, don’t overcrowd the skillet while searing.
