Ingredients

2 large zucchini

1 large boneless skinless chicken breast or 2 thighs

1 cup Italian-style breadcrumbs or Panko

1 egg

1/4 cup grated Parmesan cheese

1 cup marinara sauce

3/4 cup shredded mozzarella cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 tablespoons chopped fresh parsley or basil

Salt and pepper to taste


Instructions

1. Slice zucchini in half lengthwise and scoop out the center to form boats.

2. Brush zucchini with olive oil, season with salt and pepper, and bake at 400°F (200°C) for 10 minutes.

3. Cut chicken into small pieces. Dip in beaten egg, then coat in breadcrumbs mixed with Parmesan.

4. Pan-fry breaded chicken in olive oil until golden and cooked through.

5. Spoon some marinara sauce into pre-baked zucchini boats.

6. Add crispy chicken on top, followed by more marinara, mozzarella, and a sprinkle of Parmesan.

7. Bake at 400°F (200°C) for 10–15 minutes, until cheese is bubbly.

8. Broil for 1–2 minutes at the end for a golden top if desired.

9. Remove from oven, let cool slightly, and garnish with fresh herbs.
