Ingredients

2 boneless skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1/2 cup buffalo hot sauce

2 tablespoons butter

4 brioche buns

2 cups coleslaw mix

1/2 cup ranch dressing

2 tablespoons chopped fresh parsley

Oil for frying (vegetable or canola)


Instructions

1. Pound chicken breasts to even thickness and soak in buttermilk for 30 minutes or overnight.

2. Mix flour, cornstarch, paprika, garlic powder, salt, and pepper in a shallow dish.

3. Remove chicken from buttermilk, coat in seasoned flour mixture, pressing to adhere.

4. Heat oil to 350°F and fry chicken for 4–5 minutes per side until golden and cooked through.

5. Let fried chicken rest on a wire rack or paper towels.

6. Melt butter and mix with buffalo sauce. Toss chicken to coat.

7. Combine coleslaw mix, ranch dressing, and parsley in a bowl. Chill until ready to use.
