Ingredients

2 boneless skinless chicken breasts

1 cup orzo pasta

1 cup sun-dried tomatoes (drained and sliced)

2 cups fresh spinach

1 cup heavy cream

2 cups chicken broth

3 cloves garlic (minced)

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning


Instructions

1. Season chicken breasts with salt, pepper, and Italian seasoning.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes on each side until golden and fully cooked. Remove and set aside.

3. Lower heat to medium and add garlic. Sauté until fragrant, then stir in sun-dried tomatoes. Cook for 1–2 minutes.

4. Add orzo to the skillet and toast for 1 minute. Pour in chicken broth and bring to a simmer. Stir frequently until orzo is nearly tender.

5. Stir in heavy cream and fresh spinach. Cook until spinach wilts and sauce starts to thicken.

6. Add Parmesan cheese and stir until fully melted and creamy.

7. Slice cooked chicken and return to the skillet. Simmer for 2–3 more minutes to blend flavors.

8. Serve hot with extra Parmesan or herbs if desired.

Notes

Toasting the orzo before adding liquid adds a nutty depth of flavor.
