Ingredients

12 oz egg noodles

3 cups cooked chicken, shredded or cubed

8 oz cream cheese, softened

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 cup frozen peas and carrots, thawed

2 cups shredded cheddar cheese, divided

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups crushed Ritz crackers

6 tablespoons butter, melted


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.

2. Cook egg noodles in salted boiling water until just al dente, about 6 minutes. Drain and set aside.

3. In a large bowl, mix cream cheese, sour cream, and cream of chicken soup until smooth.

4. Add garlic powder, onion powder, salt, and pepper. Mix well.

5. Fold in cooked chicken, peas and carrots, and 1 cup shredded cheddar cheese.

6. Gently mix in the cooked noodles until fully coated.

7. Spread the mixture evenly in the prepared baking dish.

8. Sprinkle the remaining 1 cup cheddar cheese over the top.

9. In a separate bowl, combine crushed Ritz crackers and melted butter.

10. Sprinkle the buttery cracker topping evenly over the casserole.

11. Bake for 25–30 minutes, or until golden and bubbly.

12. Let cool for 5 minutes before serving.

Notes

Soften the cream cheese at room temp for easy mixing.

Don’t overcook the noodles since they’ll finish in the oven.

For extra veggies, stir in cooked broccoli or mushrooms.
