Ingredients

4 tablespoons butter

1 small onion, diced

2 garlic cloves, minced

2 stalks celery, chopped

1 medium carrot, chopped

2 tablespoons all-purpose flour

3 cups seafood stock (or chicken stock)

1 cup heavy cream

1/2 pound shrimp, peeled and deveined

1/2 pound lump crab meat

1 teaspoon Old Bay seasoning

Salt, to taste

Black pepper, to taste

2 tablespoons fresh parsley or chives, chopped


Instructions

1. Melt butter in a large soup pot over medium heat. Add onion, celery, carrot, and garlic. Cook for 5-7 minutes until vegetables are soft and fragrant.

2. Stir in flour and cook for 1-2 minutes to remove raw flour taste.

3. Slowly whisk in seafood stock. Bring to a boil, then reduce to a simmer for 15 minutes.

4. Use an immersion blender to purée the soup until smooth, or leave some texture if preferred.

5. Stir in shrimp and crab. Simmer for 5 minutes, or until shrimp are pink and cooked through.

6. Add heavy cream and season with Old Bay, salt, and pepper. Simmer 5 more minutes.

7. Serve hot, garnished with parsley or chives and a slice of crusty bread.

Notes

For best flavor, use fresh seafood and high-quality stock.

To reheat, warm slowly over low heat and stir constantly to avoid curdling.

If freezing, omit the cream and add it in fresh when reheating.
