Ingredients

10 large eggs

1 cup milk

1/2 teaspoon salt

1/2 teaspoon black pepper

8 ounces cream cheese, softened

3 cups frozen hash browns, thawed

1 pound breakfast sausage, cooked and crumbled

1 1/2 cups shredded cheddar cheese

8 slices thick-cut bacon, cooked and crumbled

2 tablespoons chopped chives or green onions

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a skillet, cook the breakfast sausage until browned and crumbled. Drain excess grease.

3. In a separate pan, cook the bacon until crispy. Let cool and crumble into pieces.

4. In a large mixing bowl, whisk together eggs, milk, salt, and pepper. Add softened cream cheese and whisk until mostly smooth.

5. Spread thawed hash browns evenly into the bottom of the prepared baking dish.

6. Top with cooked sausage, then pour the egg mixture over everything.

7. Sprinkle shredded cheddar cheese on top, followed by the crumbled bacon.

8. Bake for 40–45 minutes or until the center is set and the top is golden.

9. Let the casserole rest for 5–10 minutes before slicing.

10. Garnish with chopped chives or green onions and serve warm.

Notes

For best results, use fully thawed hash browns to ensure even cooking.

Want to add veggies? Sautéed mushrooms, spinach, or peppers work well.

Let the casserole rest before cutting to help it hold its shape.
