Ingredients

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can diced tomatoes with green chilies

1 can tomato sauce

1 cup corn

1 can black beans, drained and rinsed

6 small flour tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1 avocado, diced

2 green onions, sliced

2 tablespoons chopped fresh cilantro

1/2 cup diced tomatoes


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and cook until softened, then stir in the garlic. Drain excess grease if needed.

3. Add the taco seasoning, diced tomatoes with green chilies, tomato sauce, corn, and black beans. Stir well and simmer for 5 minutes until slightly thickened.

4. Spread a small amount of the meat mixture into the prepared baking dish. Add a layer of flour tortillas, then more meat mixture, then a layer of cheddar and Monterey Jack cheese.

5. Repeat the layers until all ingredients are used, finishing with cheese on top.

6. Bake for 20 to 25 minutes, or until the cheese is melted and the casserole is hot and bubbly.

7. Let the casserole rest for 5 to 10 minutes before serving.

8. Top with sour cream, avocado, green onions, cilantro, and diced tomatoes before serving.

Notes

Do not layer the casserole while the filling is too watery, or the final bake can turn soft and loose instead of rich and sliceable.
