Ingredients
6 large eggs
1 cup cottage cheese
1 cup shredded cheddar or mozzarella cheese
2 cups fresh spinach (or 1 cup frozen, thawed and squeezed)
3 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon chili flakes (optional)
1 teaspoon olive oil or butter (for greasing dish)
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish with olive oil or butter.
2. In a skillet over medium heat, sauté fresh spinach for 1–2 minutes until wilted. If using frozen spinach, skip this step.
3. In a large mixing bowl, whisk eggs until fully blended.
4. Add cottage cheese, shredded cheese, chopped green onions, salt, pepper, and chili flakes. Mix well.
5. Stir in the spinach until evenly distributed throughout the mixture.
6. Pour the mixture into the greased pie dish and smooth the top.
7. Bake for 35–40 minutes, or until the center is fully set and the top is golden brown.
8. Let cool for 5–10 minutes before slicing and serving.
Notes
Be sure to squeeze out any moisture from frozen spinach to prevent a watery quiche.
You can mix in cooked bacon, ham, or mushrooms for extra flavor.
Letting the quiche rest after baking makes it easier to slice and enhances the texture.
